GREENVILLE, S.C., -- Nationally known organic chef Keith Snow is taking aim at fad diets with education and online videos.

The founder of Harvest Eating has launched an education campaign online. Snow says "for years, Americans have been sold "lose weight fast solutions" as tools for living a better life." Instead Snow says, people should look to seasonal, organic and local foods. This kind of approach provides health benefits, as well as overall environmental benefits.

Snow says, "for years I've watched people fall prey to fad diets promising a multitude of benefits that are simply not sustainable, nor healthy. Harvest Eating is an opportunity to use my 20 years of culinary experience to promote long-term health and sustainability for the people who use it and for the environment as a whole."

Snow sees a marriage between buying trends and online ideo. Nearly a quarter of Americans buying organic products once a week and approximately 70% of the total U.S. Internet audience viewing videos online each month.
